High Protein Breakfast Sausage Bites
Yields: ~ 40 sausage bites
Ingredients:
1 lb ground chicken or turkey
1 lb lean ground pork
2 tsp black pepper
2 tsp onion powder
2 tsp garlic powder
2 tsp dried basil
2 tsp dried parsley
2 tsp dry mustard
2 tsp sugar or maple syrup
Like your sausages HOT? Add in ground red or cayenne pepper to your liking.
Method:
Preheat oven to 400 F.
Measure all ingredients into a large mixing bowl or stand mixer bowl with paddle attachment.
Mix thoroughly.
Scoop into mini meatballs or form a small meatball between the palms of your hands. Place on a baking sheet lined with aluminum foil spaced closely together. Slightly flatten with your fingers or the back of your scoop*.
Bake until a meat thermometer reads 165 F (74 C) about 15 minutes.
Let cool slightly on the baking sheet. Eat right away or remove from foil and cool completely in the refrigerator to reheat later. Cooked sausage bites can be frozen for a quick reheated breakfast protein.
Nutrition Tips:
This unprocessed protein will balance the usual sweets at a brunch or a special occasion breakfast.
There is only naturally occurring salt in this recipe resulting in a smidgen of the sodium level that is in processed sausages.
Including protein at breakfast slows down digestion. This allows your breakfast carbs to last longer, keeping hunger at bay.
Kitchen Tips:
If you want to avoid handling the raw meat mixture like I do, use a mini ice cream scoop like this one (affiliate link).
* Recipe can be prepared until this point and frozen for 2-3 months. Once frozen, roll up foil with frozen raw sausage bites and place in a zipper-lock bag. Unroll back onto a baking sheet and defrost overnight in the refrigerator before baking.
