This recipe represents my transition from a self-imposed mom failure to acclaimed success (from my kids) as a cupcake baker.

Well, they are cupcakes :) but homemade is always better than purchased in both size and ingredients. These contain healthy fat, milk, and an egg. So there is a little goodness in there.
Plain Jane Cupcakes
Ingredients:
1 1/4 cups all-purpose flour
3/4 cup white sugar
2 tsp baking powder
1/2 tsp salt
2/3 cup milk (or coconut milk, if needed)
1/4 cup vegetable oil (I use canola oil)
1 tsp vanilla extract
1 egg
Method:
Preheat oven to 350 F.
Line 12 muffin tins with paper cups or grease well.
In a stand mixer bowl, add all ingredients.
Blend on low speed until mixed. Beat one minute.
Use an ice cream scoop to fill paper cups 2/3 full.
Bake 15-20 minutes until tops spring back to a light touch or a toothpick inserted in the middle comes out clean.
Cool completely before icing. Add sprinkles immediately after frosting so they will stick.
Prefer mini-cupcakes or a vanilla cake? This recipe will yield enough for 24-30 mini-cupcakes (bake at 350F for 10 minutes) or an 8x8 cake pan (bake at 350F for 35-40 minutes).
Kitchen Tip:
These freeze nicely, frosted or plain so can be prepared ahead.
Nutrition Tip:
When you eat well most of the time, eating a non-nutritious food such as a cupcake, does not undo the goodness of all the healthy food you do eat. But can form a happy family memory around food. Give yourself permission to have a cupcake and enjoy it without guilt and without making up for it.

PS I like to thrift pretty one-off plates for serving.
Love the story. Your cupcakes are so beautiful on those pretty plates. It does look like a very easy recipe. If I have time, maybe I will try it. I never like to make cupcakes because nobody would eat them. Around here they would eat the cake, but not the cupcake, I’m not sure why that is because tiny bites are better.
